Brick Pizza Oven Recipes

We are always trying to find new and creative dishes to cook in our Mario Batali Amic wood burning brick pizza oven and this weekend we prepared the most delicious oak roasted Mediterranean fish with oven roasted vegetables.

Greek style brick oven fish

This rustic dish was extremely easy to prepare, healthy, looked beautiful and tasted delicious!

We used Orange roughy because it has a mild buttery flavor. Get a good roasting pan that is made for a brick pizza oven, I just used a aluminum foil style pan as its perfect for clean up and can take the high heat from a wood burning oven. We layered the pan with a bed of fresh baby spinach that was seasoned with salt and pepper, the drizzled with olive oil. next, I  layered the fish on the bed of spinach and seasoned the fish with salt, pepper and olive oil. I topped the fish with fresh cut up plum tomatoes, shallots, capers and olives.Finally  I cut thin slices of lemons and layered it on top. We also added about 1 dozen fresh shrimp. We used a combination of red oak, apple and charcoal for the heat and flavor.  I had the wood burning oven extremely hot so it literally took about 5 minutes to cook.

Our side dish was also very simple and rustic. I roasted cauliflower that was seasoned with salt and pepper and a generous amount of olive oil, when it came out of the wood burning oven I sprinkled it with Romano cheese.
