I typically let the oven heat up to 400 degrees although I must say, I never use a temperature Gage, I merely feel the inside of the oven to determine if it’s ready to cook in.
When I do wood fired salmon I like to add a Asian style glaze like honey, soy sauce, ginger and garlic. I have found that when you use high quality ingredients like fresh salmon and just a few seasonings, the end result is a simple yet elegant dish that is very organic.
