So many people think that wood burning ovens are only for pizza, while I wont argue that wood fired pizza may be some of the best food on the planet, you can use your wood burning oven for so many different things. Whatever you cook in your “regular” oven, you can cook in your outdoor pizza oven, only with the great flavors of wood.
A really easy recipe that can be used as an antipasto or a side dish is a my spin on a classic dish. Tomato and mozzarella. This dish comes alive by placing your tomatoes in the wood burning oven to bring out a depth of flavorĀ that’s not normally found in a traditional tomato and mozzarella salad.
Roated tomato and mozzarella salad!
Ingrediants:
- Fresh tomatoes like Roma or Cherry
- Olive Oil- high quality, extra virgin
- Salt and pepper
- pinch of sugar
- fresh mozzarella
- basil
- balsamic vinegar
Clean your tomatoes and coat them in the olive oil salt andĀ pepper. place them in a roasting pan and place in your wood burning oven. Cut your fresh mozzarella into chunks that match the size of your tomatoes, it should not look perfect, this is a rustic dish served family style. After your tomatoes start to get a char or bubble, remove them from the wood burning oven and finish with the basil and balsamic vinegar.
