San Marzano Pizza Sauce Recipe

My Authentic Pizza Sauce recipe for Pizza Napoletana uses  San Marzano tomatoes, which come from a small town near Naples, Italy and where first grown in Volcanic soil in the shadow of Mount Vesuvius, they are like a high quality chocolate, bitter sweet and a must if you want to make Vera Pizza Napoletana, true Neapolitan pizza.

But of coarse you cant have true authentic pizza  just by using San Marzano tomatoes…. nope, you need to cook your pizza in a brick pizza oven. Nothing brings out the true flavors of fresh ingredients like imported olive oil, San Marzano tomatoes, fresh basil and or Oregano  like a wood burning oven.

You can purchase pizza oven kits and build the wood burning oven yourself or purchase a pre-assembled outdoor pizza oven like the Mario Batali Amici brick pizza oven. I hope you enjoy this easy authentic pizza sauce recipe using San Marzano tomatoes!

Wood Fired Pizza

2 cloves fresh garlic minced
Fresh  basil, a couple of leaves chopped
1/2 teaspoon dried or fresh  oregano
1/8 teaspoon black pepper
2 or 3 teaspoons sugar (reduces acidity)
1-16 ounce can of San Marzano  tomatoes
3 tablespoons olive oil (good high quality)
salt to taste, a couple of pinches
